From Nearby Farms to Our Kitchen

Good food starts with good ingredients.

Whenever we can, we work with local and regional growers who care about what they produce and how they grow it. That gives our kitchen access to fresh vegetables, herbs, microgreens and other ingredients that can change with the season instead of arriving from a long way away because a menu says they have to be there.

One of those partners is Carolina Freedom Farm in Taylorsville, North Carolina.


Carolina Freedom Farm

Carolina Freedom Farm is a family-operated farm founded by Noah Hudler. They grow microgreens and fresh produce that come directly into our kitchen and onto the menu when they are at their best.

We like knowing where our ingredients come from. We like being able to talk with the people growing them. And we like that a relationship with a nearby farm gives our chefs the freedom to work with what is fresh and available instead of forcing the same ingredients onto the menu year-round.

That is what local sourcing means to us.

Why Local Matters

There are a lot of ways to talk about farm-to-table. We prefer to keep it simple.

Produce that spends less time traveling can reach the kitchen fresher. Buying from nearby farms supports growers here in North Carolina. And working with smaller producers gives our kitchen a closer connection to the ingredients we serve.

Most importantly, it gives us better food to work with.

The menu may change when the season changes or when something especially good becomes available. We think that is a good thing.
